That bottle of cinnamon sitting on your supermarket shelf is most likely cassia, not true cinnamon. In America, we previously did not differentiate between the cassia and true cinnamon because of their similar tastes and their belonging to the same family of trees. Cassia is rolled from the outer bark of the Cinnamomum cassia tree and has a darker color. Korintje cassia comes from Indonesia and has a strong, sweet flavor, which is why it is often used in desserts like apple pie, cinnamon rolls, or pumpkin bread.
