This single origin cardamom is grown by Don Amilcar in a biodynamic, vertically integrated farm where they grow, harvest, dry and export the cardamom seeds. Grown using traditionally organic and sustainable farming practices, the cardamom thrives in the high altitude and low temperatures of the Guatemalan cloud forests. The result is a fragrant cardamom with a high oil content and fruity flavor.
Cardamom seeds are used in a variety of cuisines for both sweet and savory dishes. They can be found in delicate coconut buns, spicy curries, vanilla custards, simple syrups for cocktails and even pickling brine. Cardamom is used in spice blends like garam masala and berbere and brings out the sweet and heat in coconut curries. It combines well with allspice, clove, cinnamon, and nutmeg. Add cardamom and orange zest to your favorite sugar cookie recipe or use for a new twist to your next apple pie. Use them to flavor tea or coffee or to simply chew the seeds as a breath freshener. Kept whole, these seeds will keep their flavor for over a year.
