Butterfly pea flowers are a member of the Fabaceae family and their orchid shaped buds can be steeped as a tea or used as natural food coloring. The flowers brew a beautiful blue color that changes to a royal purple when added with acidic foods like lemon or other citrus juices. The very mild woody flavor compliments other flavors well - try combining with sour fruit, mint, and other flowers like rose buds and lavender.
