Black cumin seeds are a bitter, oily cousin to cumin. It has a strong, nutty aroma and an astringent flavor that mellows out into a lighter, greener flavor. Toasting black cumin brings out its nutty sweetness. The almost meaty flavor makes it a favorite in vegetarian dishes and is found in many north Indian cuisines, in Punjabi and Moghul dishes.
Toast, crush, and add to lime juice for a salty limeade. Sprinkle onto feta, thinly sliced fruit and vegetables or cooked potatoes. Add to rice and omelets.
