Panchrattan Dal, Mixed Lentils

Mixed lentils, or Panchrattan Dal, is a blend of 5 different lentils - split mung beans, split chickpeas, split matpe beans, split red lentils, and split pigeon peas. Combined together, they create a range of flavors from the sweeter red lentils to the earthy mung beans. 

You can substitute this blend for any dish that calls for any one of the lentils to add different textures to your dish. Mixed lentils work great in soups, dals, and stews.
