Also called Melegueta pepper, Grains of Paradise can be used as substitute for black pepper. The Aframomum melegueta plant is a member of the ginger family and its seeds are similar to cardamom, resulting in a peppery, almost floral flavor. They are often used whole to flavor wine, beer, and liquors. Once ground, they can be add to dishes like feijoada, a Brailian black bean dish, curries, or even added to honey before pouring over cheese. Grains of Paradise works well with fruit desserts like breads and pies and combines well with cinnamon, nutmeg, and clove.
