These seeds have a bitter taste when raw that melts into sweetness as they are cooked. In fact, fenugreek has been used to make imitation maple syrup. They are often used in Indian cuisine to flavor chutneys and curries and are an ingredient in the Ethopian spice mix Berbere and the Bengali 5 spice Panch Phoron. Use in curries with other lentils, to boost the flavor of vegetables, on bread, or brew in hot water for an after dinner digestive.
