While dill herb are the leaves of the Anethum graveolens plant, dill seeds come from the flowers. Both have a similar flavor, with crushed dill seeds having an almost fennel sweetness. Dill seeds pair well with seafood and potatoes and are often used to season pickling brine for cucumbers, carrots and onions. Try crushing and sprinkling over salads of thinly sliced raw vegetables, such as beets. Dill seeds can also be chewed as a breath freshener.
