True cinnamon or soft cinnamon comes from the Cinnamomum tree. It tends to be lighter in color than cassia and has a milder but complex flavor. This cinnamon is great to use in spicy, savory dishes, where its flavor will meld together nicely with allspice, cardamom, cayenne, and clove. True cinnamon also has a low Coumarin level. True cinnamon powder is often called canela or Ceylon cinnamon.
